We read every chapter and summarize it in one or two paragraphs so you can get the information contained in the book at a much faster rate. This is an InstaRead Summary of Grain Brain: The Surprising Truth about Wheat, Carbs, and Sugar--Your Brains Silent Killers by David Perlmutter.Below is a preview of the earlier sections of the summary:INTRODUCTION: AGAINST THE GRAINIn the olden days, people usually died of old age. Today people tend to die from chronic diseases.According to a 2011 study conducted by Harris Interactive for the MetLife Foundation, people fear Alzheimer’s more than death or cancer. Many people think Alzheimer’s is caused by genetics, but modern grains are actually to blame for the surge in this disease. We can preserve the health of our brains by following better habits for brain health.Over the years our diet has changed from high-fat, low-carb to low-fat, high-carb. This change in diet is the cause of many problems, including: chronic headaches, insomnia, anxiety, depression, epilepsy, movement disorders, schizophrenia, ADHD and senior moments. The problem with carbohydrates is that they often contain gluten, a sticky protein, which many people are sensitive to. In fact, everyone may have a negative reaction to gluten. The author is a neurologist who studies brain conditions. He is board certified and a fellow of the American College of Nutrition. He claims that he is the only doctor in the country with both of those credentials. He is also a founding member and fellow of the American Board of Integrative and Holistic Medicine, which lets him have a unique view of the relationship between what we eat and brain functionality. The statistics are astounding. Diabetes and brain disease are this country’s most expensive diseases, but they are mostly preventable. Diabetes is closely related to dementia.Food allergies and obesity have been caused by processed foods and refined carbohydrates, but no one has explained the relationship between eating grains and brain health. Our ancestors ate grain as well, but the grain we eat is completely different because it has been genetically modified and processed. We are increasingly challenging our bodies by introducing foods we cannot genetically handle.Gluten is a silent germ, which can cause lasting damage and the person eating it may never know. Most people believe they can do whatever they want and then just go to the doctor for a quick fix when their bodies start falling apart.  This approach is flawed because it focuses on illness rather than wellness and the treatments are often dangerous.Pharmaceuticals are not the best way to treat disease. Instead, there are programs that will  enhance brain function in those who have brain diseases, such as going gluten free...
